2024 Yarra Valley Cabernet Sauvignon
Single Vineyard | Hand Picked | 30% Carbonic Maceration
ABV: 13.0% | pH: 3.79 | TA: 5.9 g/L | Yeast: Wild | Vine Age: 20 years
Appearance
Deep ruby with a vibrant purple rim, showing youthful intensity.
Aroma
A lifted, aromatic expression thanks to partial carbonic maceration. Bright notes of redcurrant, black cherry, and mulberry are layered with violets, fresh herbs, and a hint of graphite. Subtle wild ferment characters bring a savoury, earthy edge beneath the vivid fruit.
Palate
Medium-bodied and elegant, showing both freshness and complexity. Juicy red and black fruits lead, with cassis, cranberry, and plum woven together by savoury spice and a touch of cocoa. Carbonic influence adds a playful, juicy lift and supple tannins, balancing the more classic Cabernet structure. Acidity (pH 3.79, TA 5.9) provides energy, while tannins are fine-grained and persistent without being aggressive.
Finish
Long, fresh, and savoury, with lingering notes of redcurrant, dried herbs, and graphite minerality.
Style & Cellaring
A modern, vibrant take on Yarra Valley Cabernet—combining freshness from carbonic maceration with the depth of 20-year-old vines. Drink now for its lively, aromatic charm, or cellar for 6–10 years to reveal greater savoury complexity.
