Appearance
Pale straw with green highlights, vibrant and youthful.
Aroma
Bright and aromatic, showing fresh green capsicum, jalapeño, and cut herbs, lifted by carbonic maceration notes of passionfruit skin and subtle tropical lift. Oak plays a supporting role, with only a faint smoky nuance in the background.
Palate
Crunchy and energetic, led by green apple, citrus zest, and savoury herbal notes. The carbonic component gives juiciness and aromatic lift, while partial malo softens the edges with a gentle roundness. Oak is understated, framing rather than flavouring.
Finish
Zesty and clean, with lingering capsicum, jalapeño, and mineral drive.
Style & Cellaring
A vibrant, aromatic and textural take on Sauvignon Blanc — more savoury than fruity, with herbal crunch and carbonic lift. Delicious young for its freshness, but will develop subtle savoury complexity over 3–5 years.
