Aroma
Lifted and aromatic, the nose opens with fresh lime zest, green apple, and white blossom. Subtle wild ferment complexity brings hints of struck flint, wet stone, and a gentle herbal edge, adding depth beyond the primary fruit.
Palate
Crisp and precise, with a fine line of natural acidity (pH 3.1, TA 7) giving great drive and energy. Juicy citrus fruits—lime, lemon curd—and crunchy orchard fruits dominate, supported by a delicate sweetness (6 g/L RS) that adds roundness without detracting from the dry, mineral core. Wild fermentation has introduced a touch of texture and savoury nuance, with a faint saline edge.
Finish
Long, clean, and chalky with lingering notes of citrus peel and slate. The interplay of gentle sweetness, vibrant acidity, and textural wild-ferment complexity creates both drinkability now and promise for mid-term cellaring.
Style & Cellaring
Off-dry to dry in style, this Riesling is approachable young but will reward 5–8 years in the cellar, developing honeyed and toasty complexity while retaining its acid backbone.
